Persimmon trees make wonderful ornamental specimens. They have lovely foliage followed by tasty orange fruits. Persimmon trees are classified as astringent or non-astringent. Astringent varieties are best eaten when fully ripe and soft. Non-astringent varieties can be eaten when firm. Astringent varieties are used for baking, cooking as well as eating fresh. Non-astringent varieties such as the most popular variety Fuyu are best eaten fresh. All persimmon trees do dest in well drained soil.
